Yam is a staple food across west Africa and much of Asia, and its tubers are also a traditional medicine. The part credited with the activity is not a small molecule but a polysaccharide, a long sugar chain pulled out of the tuber, and the literature reports antioxidant, immune-modulating and glucose-lowering effects for it. The difficulty is that almost none of those papers describe the same material. How the polysaccharide is pulled out changes what comes out: hot water, alkali, acid, enzyme-assisted and ultrasound-assisted methods each yield a different mixture, and the purification afterwards changes it again. Two papers can report the same striking effect for what they call the same thing and still be testing different substances. Often enough a reader is left unable to say what was tested at all, which makes an effect unusable even when it is real. This review works through that in order, from tuber to assay, so that a reported activity can be read against the material it was actually measured on. Whoever joins spends twelve weeks reading papers and writing about them.
